I'm going to start by saying one thing: If you're disappointed with the series, it's your fault.
Did you really expect to see something similar to the games? Two films have passed and I think the direction of these productions is already quite clear. Once and for all, get out of your head the idea that you will see a story faithful to Sonic's lore. That's not gonna happen. And Sonic 3 is not going to be the exception.
This is a new universe, which takes references from Sonic's lore to tell its own version of things.
I've seen people say that Prime has turned out to be better than the Knuckles series, but that seems like an exaggeration to me. They are very different products and I think Knuckles fulfills its purpose: Being a Spin off of the Sonic movies. If you forgot that, that's your problem.
I admit that a part of me got a little excited when I saw that Pachacamac in the trailer, but I've learned not to let my imagination run wild with things like that. My feet on the ground and thus I avoid anger.
Now, to the point. The series seemed like a waste of potential to me, but it also doesn't seem like absolute crap to me. It's far from what I would have wanted, but its short length and the amount of fandom references make it entertaining enough to pass the time. Especially if you are a veteran in the fandom.
Apart from a couple of surprises, the series doesn't add much to the lore of this new universe. I can assure you that you don't need to watch this series to see Sonic 3.
The quality of the production must also be recognized. For a spin off series, it's not bad at all. It's nice to see. If only they had put a little more effort into the script...
So. Do I recommend this series? The short answer is... You can't lose. At least it's fun to look up the fandom references. Just try not to have high expectations with the plot and you will enjoy it better. That's what I did and that's why I'm not angry. The series is exactly what I had imagined it would be.
Anyway, now we just have to wait for the Sonic 3 trailer, and I personally recommend that you not get your hopes up. The secret here is not to have high expectations and this way you will have a better experience.
